Rummy Coconut and Mango Chutney

3 1/2 cups

1½ cups cider vinegar
½ cup coconut rum
1¼ cups firmly packed dark brown sugar
1¼ cups white sugar
3 cups peeled and chopped mango
½ cup golden raisins
1 tablespoon fresh lime juice
2-3 pices candied ginger, soaked to remove sugar
1 teaspoon salt
1 teaspoon dry mustard
½ teaspoon minced garlic
½ teaspoon cayenne pepper

Methods/steps
  • Bring vinegar and sugar to boil over high heat
  • Reduce heat to medium-low and add remaining ingredients
  • Simmer until mixture thickens slightly, 20-25 minutes
  • Cool. Chutney will continue to thicken.

Notes:

Recipe can be cut in half.

Chutney can be canned for longer storage.
