Mango-Lime Glazed Chicken

5 limes
½ mango, cut into cubes
½ teaspoon freshly grated ginger, plus several pieces for roasting
1 tablespoon honey
1½ tablespoon olive oil
salt and freshly ground pepper
1 whole chicken (approx. 3 lbs.)
1 tablespoon unsalted butter
several stalks lemongrass

Methods/steps
  • Preheat oven to 450°
  • Grate zest and squeeze juice from one lime.
  • In food processor, combine lime juice, mango ginger, honey, oil, and dash of salt. Puree to combine; mango should not be completely smooth.
  • Sprinkle chicken, inside and out, with salt and pepper. Puncture 2 limes and place in chicken cavity then tie legs with twine.
  • Divide butter in half. Slip pats of butter under skin on each side of breast.
  • Half the remaining limes and place in roasting pan with ginger pieces and lemon grass then place the chicken in the pan.
  • Roast in bottom third of oven until chicken begins to brown (about 20 minutes). Baste with pan juices and brush glaze over chicken. Continue roasting and basting and glazing every 10 minutes.
  • After 30 minutes, reduce oven to 350° and cook about 10 minutes or until chicken has internal temperature of 185º.
Additional Tips

Note: If chicken beings to overbrown, cover with foil.
