1 cups flour 1½ cups brown sugar 2 teaspoons cinnamon 2
teaspoons baking soda ½ teaspoon salt ¾ cup canola oil 3 eggs,
well beaten 2 cups diced mango ½ cup raisins, floured ½ cup
chopped nuts (walnuts or almonds) 1/4 to 1/3 cup coconut rum
(optional)
Methods/steps
Preheat oven to 350° F
Grease bundt pan
Combine dry ingredients and form a well in the center
Add oil and other wet ingredients and mix thoroughly
Pour batter into greased bundt pan.
Bake about 1 hour, check at 45 minutes by putting a skewer or long toothpick in the cake. It should come out clean.
Remove and cool slightly then invert onto serving plate
