Mango Quesadillas

8 oz. goat cheese, crumbled
8 oz. Monterey Jack cheese, grated
8 garlic cloves, minced
1 onion, chopped
2 poblano peppers, roasted, peeled, seeded and diced
2 red peppers, roasted, peeled, seeded and diced
1/2 cup fresh minced cilantro
1 teaspoon salt
1/4 cup fresh lime juice
4 ripe mangos, peeled, pitted and chopped
16 flour tortillas
4 ounces melted butter

Methods/steps
  • In large bowl, combine cheeses, garlic, onion, peppers, cilantro, salt and lime juice.
  • Fold in mango and taste, adjust seasonings as desired.
  • Spread a moderate amount of the mixture of half of each tortilla and fold over. Brush the outside of the tortilla with melted butter.
  • Heat a large skillet over medium-high heat. Cook quesadillas for 3 to 4 minutes on each side or until golden brown.
  • Cut each into 3 triangles and serve.
