Mango Nut Bread
Description Easy to make sweet bread.

1 loaf

½ c margarine, at room temperature
1 cup sugar
2 eggs
1 to 1¼ cups diced mango (about 1 medium mango)
2 cups flour
2 teaspoons baking powder
1 tablespoon lime juice
½ teaspoon salt
1 teaspoon vanilla
¼ cup dry milk
½ cup chopped pecans

Methods/steps
  • Preheat oven to 350° F.
  • Grease a small loaf pan and set aside.
  • Cream margarine and sugar.
  • Add eggs, mix well.
  • Combine dry ingredients and add to mixture.
  • Fold in mango and nuts.
  • Bake about 45 minutes in loaf pan.
Additional Tips
Feel free to substitute your favorite nut or leave out entirely.
