½ c margarine, at room temperature
1 cup sugar
2 eggs
1 to 1¼ cups diced mango (about 1 medium mango)
2 cups flour
2 teaspoons baking powder
1 tablespoon lime juice
½ teaspoon salt
1 teaspoon vanilla
¼ cup dry milk
½ cup chopped pecans
Methods/steps
Preheat oven to 350° F.
Grease a small loaf pan and set aside.
Cream margarine and sugar.
Add eggs, mix well.
Combine dry ingredients and add to mixture.
Fold in mango and nuts.
Bake about 45 minutes in loaf pan.
Additional Tips
Feel free to substitute your favorite nut or leave out entirely.
