Mango Jam

8 - 8oz jelly jars

4 cups ground mango*
2 tablespoons lime juice
7 ½ cups sugar
1 pouch liquid pectin

Methods/steps
  • Combine mango, lime juice, and sugar, mix well and bring to a full rolling boil.
  • Boil hard for one minute stirring constantly.
  • Remove from heat and at once stir in pectin.
  • Stir and skim by turns for five minutes to cool slightly and to prevent floating fruit.
  • Pour into hot sterilized jars and seal.
  • Hot water process for 10 minutes
Additional Tips

Stores for 1-2 years.

*If you like small chunks of fruit, simply mash the mango pulp with a potato masher.
