Mango Cobbler
Description

Easy to make mango dessert. Great with fresh whipped cream or ice cream.

Filling
4 cups mango
2/3 cups sugar
2 tablespoons cornstarch
1 tablespoon butter
Cinnamon (optional)

Topping
1 cup self-rising flour
1 tablespoon sugar
3 tablespoons shortening
½ cup milk

Methods/steps
  • Preheat oven to 400° F.
  • Peel and cube mango.Cook mango and sugar until mango begins to soften, stirring often.
  • Mix cornstarch in small amount of water and stir into hot fruit. Pour into an ungreased 2 quart baking dish and dot with butter. Sprinkle with cinnamon, if desired.
  • Mix flour, sugar, and shortening together with pastry blender (or two knives) until mixture looks like "meal." Stir in milk and mix well. Drop by spoonfuls onto hot fruit.
  • Bake for 25 minutes or until golden brown.
  • Serve warm with whipped cream or ice cream.
