Lemon Mango Salad
Description Light, healthy tropical salad.

6 cups romaine lettuce
1 carrot, peeled and grated
½ cucumber, peeled, sliced
1 mango, peeled and cut into slices
½ cup diced tomato
Zest and juice of one lemon
1 tablespoon olive oil
Black pepper to taste

Methods/steps
  • Chop lettuce and rinse well in cold water, then drain.
  • In large bowl, place lettuce and top with carrot, cucumber, mango, and tomato.
  • Chill until ready to serve.
  • Just before serving, toss with lemon juice, lemon zest, olive oil, and black pepper.

One cup serving: 65 calories, 2.5 g fat, 0 g saturated fat, 0 mg cholesterol, 20 mg sodium, 11 g carbohydrate, 2.5 g fiber, and 2 g protein.
