Keep mangos at room temperature, out of direct sunlight, until ripe. To speed up the process, place the fruit in a paper bag and roll the top closed.

Ripe mangos can be preserved by placing in the refrigerator -- this will permanently halt the ripening process. Mangos can be kept in the refrigerator for up to a week.
